I love food. LOVE IT. One thing that always scared me about trying to eat healthier was that everything would be disgusting. I’ve been a picky eater my entire life, really..I’m one of those people that when you tell me “This has eggplant in it, try it! It’s so good!”, I will say “Uh no…eggplants are purple and look weird”. So, it’s always such a blessing when I find something that is healthy and delicious! (The recipe below doesn’t include eggplant, just so you know. Because, like I said, they’re purple and look weird)
That being said, I want to share one of my new favorite recipes with you all! This has become my new go-to meal. Since I found it, I’ve made it around six times, and I’ve yet to get sick of it. Southwestern Black Bean Salad

Ingredients:
- 1 15.5 oz can black beans, rinsed and drained
- 9 oz frozen corn, thawed
- 1 tomato, chopped
- 1 small avocado, diced
- 1/4 cup red onion, chopped
- 1 scallion, chopped
- 1 lime, juice of
- 3 tbsp extra virgin olive oil
- 1 tbsp cilantro
- salt and fresh pepper
I obviously don’t include the tomatoes-YUCK! It’s so quick and easy, plus it tastes delicious! I’m prone to pick recipes that are simple like this one is. Most of the time, when I’m hungry, I want it quick! Which is one of the main reasons that fast food and drive-thru’s were the ‘convenient option’. You can pretty much do anything you want with it. It’s great in a bowl alone or with some kind of wrap (Whole Wheat, Spinach, Low Fat, Low Carb-Whatever!). I prefer it with a little sour cream mixed in and on a whole wheat wrap.
